Many people love savoring Georgian dishes, but not everyone knows how to prepare them. - The tour begins in a private house, located in a green and quiet area of Georgia's capital. We start with a brief theoretical introduction, where guests will learn the history of Georgian cuisine, get acquainted with the main Georgian spices, and understand how to select and use them in cooking. Sipping chilled wine and tasting various types of cheese, future chefs will discover the diversity of Georgian cheeses and why they are considered a national treasure.
- After an engaging conversation, we move on to cooking the dishes. We select the necessary spices, enjoying their fragrant aroma, and learn to evaluate ingredients to determine their suitability for the dish. We'll uncover fascinating nuances that differentiate modern cuisine from classic recipes used in Georgia 100 years ago.
- During the master class, guests will prepare 4 dishes. The first will be Khinkali. You'll go through all the stages: from kneading the dough to carefully shaping the “tails.” Along the way, you'll learn a lot of interesting facts about this most famous Georgian dish.
- Next, we'll prepare Khachapuri. You'll discover the origins of its name and the various types of Khachapuri. In this master class, participants will make Imeretian-style Khachapuri. During the process, you'll learn which local cheeses can replace Georgian cheese.
- Then come the meat dishes, specifically a chicken dish chosen by the guests. This could be Shkmeruli, Chakhokhbili, or Satsivi. Carefully selecting spices, chopping, frying, or steaming, you'll enjoy the aromatic clouds as we move to the next menu item.
- While the chicken is simmering, you'll master the secrets of preparing a mushroom or vegetable dish (chosen by the guests). This could be mushrooms with Sulguni cheese, eggplants with walnuts, or Pkhali – depending on the season.
- The master class concludes with a traditional Georgian feast, where all the aromatic dishes are served, and toasts are made under the clinking of wine glasses. Enjoying the incredible taste, cheerful company, and friendly conversation, you'll realize that Georgian cuisine is not only about delicious dishes but also about genuine human connection.
